Trim the brussels sprouts. Cut in half or quarters if they are large.
Chop the garlic cloves, place in a bowl and sprinkle with salt for 10 minutes. This allows the natural oils to come out and will enhance the garlic flavour. This also helps to prevent the garlic from burning while cooking.
Lightly melt coconut oil in a small sauce pan and add salt. In a large bowl, toss all ingredients and add to baking sheet.
Bake for approx 30 minutes, tossing once while baking.
