  • 1 1/2cups old-fashioned oats
  • 2cups crisp brown rice cereal
  • 1/4cup shredded coconut
  • 3-4tablespoons nut or hemp milk
  • 1/4cup honey or liquid sweetener of choice
  • 1/2cup of mix-ins of choiceIE hemp seeds, almonds, raisins, dried cranberries, cacao nibs
  • 1-2tablespoons raw cacao powder
  • 1-2teaspoons Vanilla extract
  • Cinnamonto taste
  • Coconut oilto grease slow cooker
  1. Lightly grease inside of slow cooker with coconut oil. Line rimmed baking sheet with parchment paper.
  2. In a large bowl, combine oats, rice cereal, and shredded coconut.
  3. In a separate bowl, mix together honey, vanilla extract, and non-dairy milk.
  4. Pour the liquid mixture into the dry mixture, and mix until dry ingredients are completely coated.
  5. Transfer the mixture to slow cooker. Place lid on slow cooker slightly askew so that air can circulate. This will make sure the granola is crispy, not soggy.
  6. Cook granola on high for 2 – 2 1/2 hours or until crunchy, stirring gently every 30-45 mins or so.
  7. Once cooked to desired crispiness, transfer to cookie sheet, and add in mix-ins of choice.
  8. Store in an air-tight container to enjoy throughout the week.
