Grr-oats my goodness! Porridge

Groats-em-gee this porridge is scrumptious. Hearty buckwheat, soft dates and apple chunks, welcome to fall authenticity. Give it a go and feel free to play around with the toppings to incorporate some of your favorite seeds, nuts, fruit or other goodies!

Ingredients
  • 1/2 Cup buckwheat (groats)
  • 2 Teaspoons chia or flaxseed
  • 1 Cup non-dairy milk of choice
  • 1/2 Cup water
  • 1 Teaspoon vanilla bean powder
  • 1/4 Teaspoon Cinnamon
  • 1 Grated red apple
  • 1-2 Medjool Dates
Optional ingredients for toppings
  • Nuts and/or seeds of choice
  • Fresh fruits (blueberries, figs, apples etc.)
  • Rhubarb (oven roasted)
  • Coconut shavings
  • Cacao powder and/or nibs

Instructions
  1. Combine buckwheat, chia, mylk, dates, vanilla and cinnamon in a bowl.
  2. Cover and let sit overnight in the fridge.
  3. Add 1 grated apple with water to a small pot, cover and cook on low heat for approximately 5 minutes (until thick). Add more water if needed.
  4. Combine buckwheat mixture and apples.
  5. Add desired toppings and enjoy!
