buckwheat (groats)

chia or flaxseed

non-dairy milk of choice
1/2
Cup
water
1
Teaspoon
vanilla bean powder
1/4
Teaspoon
Cinnamon
1
Grated
red apple
1-2
Medjool Dates
Optional ingredients for toppings
Nuts and/or seeds of choice
Fresh fruits (blueberries, figs, apples etc.)
Rhubarb (oven roasted)
Coconut shavings
Cacao powder and/or nibs
Instructions
Combine buckwheat, chia, mylk, dates, vanilla and cinnamon in a bowl.
Cover and let sit overnight in the fridge.
Add 1 grated apple with water to a small pot, cover and cook on low heat for approximately 5 minutes (until thick). Add more water if needed.
Combine buckwheat mixture and apples.
Add desired toppings and enjoy!
