Cilantro Fiesta Slaw
medium-large purple cabbage
(or combo of green and purple, sliced thinly)
(seeded and finely chopped)
(stems and leaves, chopped)
cold pressed extra-virgin olive oil
(If you wish to have a creamy texture)
Prep all veggies. Best to core the cabbage and slice thinly with a sharp chefs knife or mandoline.
Place all ingredients in a large bowl, toss to combine. Adjust seasoning with more lime and salt if desired.
