Ingredients
  • 1/2 medium-large purple cabbage(or combo of green and purple, sliced thinly)
  • 1 large carrot(shredded)
  • 3+ green onion(thinly sliced)
  • 1 Jalapeno chili(seeded and finely chopped)
  • 1cup cilantro(stems and leaves, chopped)
  • 1/4cup lime juice(freshly squeezed)
  • 1/2tsp mountain/Himalayan salt
  • 3tbsp cold pressed extra-virgin olive oil
Variations
  • 2tbsp raw tahini(If you wish to have a creamy texture)
Instructions
  1. Prep all veggies. Best to core the cabbage and slice thinly with a sharp chefs knife or mandoline.
  2. Place all ingredients in a large bowl, toss to combine. Adjust seasoning with more lime and salt if desired.
