Instructions
Preheat oven to 425 degrees.
Cut beets in half and toss them in olive oil, wrap in tinfoil and bake for 30-40 minutes or until tender (easily pierced with a fork), unwrap and let cool.
Once beets are cooled, place all ingredients in a high-powered blender or food processor and blend until smooth. Taste, adjust lemon and salt if desired.
Serve immediately if adding in PureFood products, or chill in fridge to save for later if omitting PureFood powders.
