Ingredients (Serves 2)
Dressing:
- 1/4 cup fresh orange or pineapple juice
- 1.5 Tbsp fresh lemon juice
- 1 tsp gluten free soy sauce
- 1 clove organic garlic minced
- 2 tbsp organic extra virgin olive oil
- pinch of sea salt
Salad:
- 1- 2 organic avocado
- 1/2 bunch of organic kale, stems removed and chopped into 1/2 inch wide strips
- 1 organic apple sliced thinly
- 1 tsbp organic raw hemp seeds
- 1tbsp organic raw pumpkin seeds
Directions
Whisk together dressing ingredients in a bowl, set aside. Wash kale and cut into thin strips. Wash and thinly slice apple. Toss dressing into kale and apple slices. Cut avocado into cubes. Garnish salad with avocado, hemp and pumpkin seeds. Enjoy!
