Ingredients (serves 1)
- ¼ cup organic blueberries (fresh or frozen)
- ¼ cup organic raspberries (fresh or frozen)
- 2 leaves of organic kale (stems removed)*
- T tbsp. organic shredded coconut
- 1tbsp of chia or hemp seeds
- 1 cup organic unsweetened milk alternative (hemp, almond, brown rice, coconut)
* Can substitute with collard/ chard if so desired
Directions
Wash kale, remove stems and core, and chop into strips. In a high speed blender combine coconut, chia, kale and milk alternative and blend until kale is mostly combined. Add berries and blend until smooth. Enjoy right away, no not refrigerate, the pectin in the berries will gel.
