Chilled Chickpea Cookie Dough Bites
Cookie dough is gift sent straight from the heavens, and that’s a non negotiable fact! One day I came across a recipe for chickpea cookie dough dip, and it was life changing to say the least. But because it’s summer, I made some changes to make the snack more “fun in the sun” appropriate.They’re healthy, cute and the perfect tag a long to any beach day!

Ingredients
  • 1.5 cups Chickpeas
  • 2 teaspoons Vanilla extract OR - 1 teaspoon vanilla bean powder
  • 1/4 cups Nut Butter of your choice
  • 1/4 cup Nut Milk or Hemp Milk
  • 1/4 teaspoon Cinnamom
  • 1/3 cup Carob chips or Vegan dark chocolate chips or Raw Cacao Nibs
  • 1 tablespoon Date Syrup or honey or pure maple syrup
  • 2-3 tablespoons Steel cut oats

  • 1.5 cups Chickpeas
  • 2 teaspoons Vanilla extract OR - 1 teaspoon vanilla bean powder
  • 1/4 cups Nut Butter of your choice
  • 1/4 cup Nut Milk or Hemp Milk

  • 1/3 cup Carob chips or Vegan dark chocolate chips or Raw Cacao Nibs

Instructions
  1. Add all ingredients except carob chips into a blender, and blend until smooth.
  2. Pour mixture into a bowl and add in carob chips.
  3. Use an ice cream scoop or small spoon to scoop out small balls of the dough. Place them on a tray lined with parchment paper.
  4. Place in the freezer overnight. Optional: After 2-3 hours of being in freezer, coat the balls in a healthy chocolate hazelnut spread or date syrup/other low sugar sauce and top with coconut/ shaved dark chocolate. You can eat them right away once they’ve been in the freezer for about 6-8 hours. Due to the chickpea consistency they don’t get icy or fully freeze, so they’re perfect for kids to munch on as well.
