Vegan Doughnuts

These little vegan, gluten-free doughnuts are a healthier alternative to heading out to your local coffee shop, but don’t disappoint on the flavour front. Get creative with toppings – you can dip or drizzle some melted dark chocolate, or roll them in coconut, cinnamon, and cacao before you bake them up!

Ingredients
  • 3/4 cup coconut flour
  • 3/4 cup All purpose gluten-free flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup Coconut Milk
  • 1 cup Coconut sugar or cane sugar
  • 1/3 cup Coconut oil plus extra for greasing your baking sheet
  • 1/2 cup Apple sauce (unsweetened)
  • 1 teaspoon vanilla bean powder
  • 1/2 cup Unsweetened coconut flakes (plus more for dusting, if desired)
  • Cinnamon (for dusting)
  • raw cacao powder (For dusting)

Instructions
  1. Grease and flour a donut pan, or use a cookie sheet to make donut holes.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. Sift together coconut flour, baking mix, baking powder, baking soda, and salt. Mix together in a bowl and set aside.
  4. In a medium pot, add in the coconut milk and oil and heat just until the coconut oil melts. Mix gently with a wooden spoon while its warming, but do not allow the mixture to boil.
  5. Once the coconut oil is melted, remove from heat and add in sugar. Stir until the sugar is dissolved. Mix in the apple sauce and vanilla.
  6. Pour the liquid mixture into the dry mixture, mixing gently to combine. If the mixture gets clumpy, you could use a hand mixer or immersion blender until the batter is smooth.
  7. Add in coconut flakes and mix to combine. Pour into either donut pans, or roll into small balls to make donut holes. If using a donut pan, fill each compartment about halfway to allow the batter to rise. If making donut holes, after you roll the dough into a ball, coat the ball in water, then roll in raw cacao powder, cinnamon, coconut flakes, or all three!
  8. Bake for 15-20 minutes at 350 degrees Fahrenheit. Allow to cool for 15-20 minutes. Once cooled, you can drizzle or dip in melted chocolate or a light glaze.
