Cilantro Fiesta Coleslaw

Fall fiesta meets summer flavour in this cilantro coleslaw cabbage dish. Our Spiced Cilantro Lime Dressing is perfect on top of this slaw. Additionally you can serve this along side our Tempeh Black Bean & Yam Rice Skillet for a delicious dinner spread. Just don’t expect there to be any leftovers 😉

Ingredients
  • 1/2 medium-large purple cabbage (or combo of green and purple, sliced thinly)
  • 1 large carrot (shredded)
  • 3+ green onion (thinly sliced)
  • 1 Jalapeno chili (seeded and finely chopped)
  • 1 cup cilantro (stems and leaves, chopped)
  • 1/4 cup lime juice (freshly squeezed)
  • 1/2 tsp mountain/Himalayan salt
  • 3 tbsp cold pressed extra-virgin olive oil
Variations
  • 2 tbsp raw tahini (If you wish to have a creamy texture)

Instructions
  1. Prep all veggies. Best to core the cabbage and slice thinly with a sharp chefs knife or mandoline.
  2. Place all ingredients in a large bowl, toss to combine. Adjust seasoning with more lime and salt if desired.
